Yogurt Coconut Smoothie

One can make so many types of smooties using coconut oil and coconut milk. My personal favourite is banana smoothie, I just like its taste! Okay, so first time when I heard about coconut smoothies I was of the opinion that we can only use coconut milk to prepare them and it tastes good only with select fruits say strawberries etc. but I was wrong.

Yesterday I was reading book by Dr. Fife, flipping through pages I came across a mention of a yogurt smoothie. I have never made a yogurt based smoothie before, so I immediately set out to make it, it was easy and let me tell you very good in taste. The key difference I found between this and normal smoothie was it uses coconut oil and not coconut milk. The reason being yogurt serves the role of milk in this case.

Requirements for coconut smoothie

  • 1 cup yogurt (you can take any flavoured one if you want , some people may also want to use organic yogurt)
  • 1 cup fruit juice of your choice
  • 2 cup fruits of your choice
  • 2 table spoons of coconut oil (melted)

All the ingredients should be in chilled state to give best results. Do not chill coconut oil though, as mentioned it should be in melted state.

Note that this does not use milk and thus great for people with lactose intolerance.

Process:

The process of making this is same as that of any normal smoothie. You need to blend all the ingredients using a blender / mixer till the time they mix properly and become smooth. The most tricky part of this preparation is to add coconut oil. See, if one puts coconut oil in the beginning than because of the low temperature coconut oil will freeze and make small lumps / beads. To avoid this you should add coconut oil in the end and then blend for 1 more minute.

One great thing about this smoothie is flexibility it provides in terms of fruit / juice one can use. In my case I used strawberry juice along with some peach (as fruit) to prepare it.
